Fantastic New Recipe in Our House

While searching the Internet yesterday for a good muffin recipe I came across a recipe called “easy fruit coffee cake” at Tammy’s Recipes.  I wanted to see if it could be a dessert cake and possibly a breakfast treat cake so I made it last night.   We ate it last night for dessert and this morning for breakfast, it was that yummy.   This first time, I tried making it with some fresh blueberries I’d frozen late last summer.  But we both decided it would be fantastic with raspberries, strawberries and especially apples.  Dave liked it so much he wants me to make it for his co-workers for their weekly meeting next week.

I’m going to post the recipe as I made it.  Tammy’s recipe was slightly different and if you want her original just click on Tammy’s Recipes in the paragraph above.

FRUIT COFFEE CAKE

Preheat oven to 350 degrees.  I used a plain old cast iron skillet with cooking spray, but a greased 8 or 9 inch baking pan is in the original recipe.

BATTER:

2 cups of all-purpose flour

1/2 cup plus 2 tablespoons of sugar

1 tablespoon of baking powder

1/2 teaspoon of salt

2 eggs

14/ cup vegetable oil

3/4 cup milk

1 teaspoon of vanilla

1 cup of fruit (like I said blueberries worked great, raspberries, strawberries and apples would also probably be yummy)

TOPPING:

1/3 cup of all purpose flour

1/3 cup brown sugar

1/4 cup butter, softened (I used room temperature butter)

1 teaspoon cinnamon

INSTRUCTIONS:

1.  In a large mixing bowl, combine flour, sugar, baking powder and the salt.

2.  In a little bowl using an electric mixer beat the eggs for about 2-3 minutes making them frothy.

3.  Pour the eggs, oil,  milk & vanilla on top of dry mixture and stir until combined.  Fold in fruit.

4.  Pour the batter into your prepared pan.

5.  For the topping, mix flour, brown sugar and cinnamon then drop in butter slices.  I used a pastry cutter to mix everything together, but two knives to cut in the butter would work just as well.  You want the topping to have small crumbles of butter throughout.  Sprinkle this mixture over the top of the batter.

6.  Bake for 50-60 minutes.  Mine was done at 50 minutes.  At 40 minutes, I covered the cake with foil because the topping was getting pretty brown.

7.  I served it warm for dessert and cold for breakfast.  Might be really tasty with vanilla ice cream when serves as dessert.

After the cake had cooled in the pan for about 30 minutes and because I used a round cast iron skillet, I was able to put the foil back over the top, flip the cake out upside down and place it right side up on a cake pedestal.  It made a pretty presentation.

 

Death By Thyme!

I love vegetable beef soup (homemade).  So all day I’ve been tinkering with a lovely crock-pot full of vegetable beef soup.  It was a tad bland so I decided to add some herbs.  And I had a little accident with the jar of thyme right over the crock-pot.   I didn’t dump the whole jar in, but let’s estimate it at about 2 heaping tablespoons.  Arf!  I took a sip almost two hours ago and it tasted horribly thymee (new word).  I’m going to go “doctor” on it, but we might just have to suffer through eating a huge pot of really strongly favored soup.   Major bummer!

 

The Kiddo Has a Heartbeat!!!!

!6 weeks and finally I got to hear the heartbeat!!!!!!!!!  At 12 weeks the midwife couldn’t hear a heartbeat so we had to do another ultrasound so I got to see the little peanut, but still hadn’t heard anything from him/her.  This appointment was pretty standard.  Just listened to the heartbeat and checked weight.  My blood pressure is still fantastic (yeah).  But I’m sweating the upcoming 28 week blood glucose test.  I’m so freaked out about the potential of developing gestational diabetes.  Not that I have any signs of anything right now, this is just one of those things I don’t want (not that anyone does).

So on Feb 26th, I have a “level 2 ultrasound due to advanced maternal age”.  Translation: Andrea is “old” for having a kid.  They’ll check to make sure all the baby’s organs are in place and functioning and make a rudimentary check for Down’s Syndrome.   They do this for all over-35 pregnant gals.  And don’t you just love the “advanced maternal age” thing.

Hearing the heartbeat was pretty awesome!

 

Hungry All The Time

Okay, I have an appointment with my midwife here in like 1.5 hours.  I’m actually concerned that I gained maybe up to 4 pounds this month.  Why is this bothering me?  This might sound stupid, but I didn’t want to gain any weight while pregnant because I’m already overweight.  And 4 pounds is totally normal to have gained by 16 weeks, but I’m still wigging out.   I’ve been starving almost continuously for about 3 weeks now so some weight gain is to be expected, I suppose.

Don’t get me wrong, I’m not thinking about this from a vanity point of view, but more a safety point of view because I don’t want to complicate delivery or increase my chances of developing gestational diabetes due to weight gain.  I just need to be more careful about food choices, but man when I get hungry taking the time to peel a carrot sounds like an eternity versus opening the cheese and cutting off a hunk.

When I get hungry these days, I have visions of the baby floating around yanking on the umbilical cord with an annoyed look because I’m taking to long to get food down there.

So I’ll know here in a short while if I gained any weight according to the midwife’s scale…

 

Feeling Better, Mostly

I had a wicked 15 day cold/sinus infection thing going on, but I feel like today that I’m coming out of it.  My cough is less frequent and the running nose thing seems to be gone, but the sinus pressure/headache thing is kind of still lingering.

My house has suffered because of this sick thing I’ve had going on so ’tis time for it to be gone, I got stuff to do!  On today’s agenda is cleaning of the bathroom and potentially our bedroom, I’d like to do mega floor to ceiling cleaning in those rooms so I might only get one accomplished today.  And I am going to make a pot roast for dinner!  I’m cooking it on the stove top because it just seems to come out better for me when it has sat simmering for hours, rather than cooked more quickly in the oven.

So I’m alive.  I just haven’t been blogging lately because I wasn’t doing anything except feeling pretty miserable for two weeks.  On the pregnancy front though, I have started to need to wear my new maternity tops because my regular shirts either don’t close anymore at the bottom or seem awfully short nowadays.  That’s a pretty awesome new development!  I’m feeling a little more like I’m pregnant.  I can tell the muscles in my lower abdomen are stretching to accommodate baby.

Last week I went to Target and worked on our baby registry some more and I think I’m about finished with it.  There might be a few more things I think of that we’ll need as time passes, but for the most part it is pretty finished.

 

Taking Up Another Person’s Blog Challenge

In the toolbar section to the right you will see a category for other blogs I like to read.  If you click on Biblical Womanhood today, she’s started a new challenge and I think I’m going to take part in it.   And she’s got a pretty easy cleaning/decluttering task to attend to this week and it goes along with my plans to get my house more organized before the baby arrives.  This week she has challenged folks to clear out all garbage from the entire house.  Since I’ve been down with a nasty cold for a week, my house actually needs to have this done so the timing is great.  Then she says to scan each room for quick stuff we find that can be given away, sold or is a maybe item to get rid of.

All that sounds easy enough and I’ll feel like I’m making headway toward getting the house completely cleaned and organized.  The sun was shining in brightly through our open curtains over the weekend and I got to see just how many cobweb/dust bunnies had accumulated in corners and on the ceiling since this past fall.  These things tend to sneak up on a person.

It is still January and there is still tons of snow on the ground with more to come, but it’s time I get busy on some Spring Cleaning chores.

 

Second-Hand Kids Stuff Might Be Okay Afterall

Back on January 5, I wrote about how items meant for use by children under the age of 12 were now going to have to be individually tested for lead and certified prior to sale.  The law is to take effect Feb 10, 2009.  It looked like small & home-based children’s clothing, diaper and toy makers were about to be put out of business.  And it looked like thrift and second-hand stores were going to be effected too.

Well, the Consumer Product Safety Commission has now issued several press releases (specifically, this one is informative) clarifying their position, the law and potential targets for enforcement.  WHEW!  You all know how the government can be vague and these press releases are not exactly perfect examples of clarity, but they make me breathe a bit easier.

Here’s my nutshell version after reading the press releases.  If you are a giant toy manufacturer producing products in third-world countries ya gotta get your junk tested for lead and other harmful chemicals.  If you are a second-hand resellers, you need to pay attention to the CPSC’s website and try not to sell junk for kids that has been recalled.  But of course, the wording is such that if you make a product meant for children under 12 after 2/10/09 you could, potentially, but it’s very unlikely, be called upon to produce evidence your products are safe for use by children under 12.

So I feel better about my chances of being able to purchase second-hand clothes for my kiddo.  And maybe some nice toys possibly even made here in the USA!

I don’t think my concern over this law is completely dismissed yet so I might say something about it again.

 

So I Bought a Pie

I cheated (see entry below) and bought a Sara Lee frozen apple pie, it was on sale.  So I think we are going to have pot pies for dinner with a salad (the salad is so that I don’t totally feel like we are eating bad calories).  And there ya go! I’ve celebrated National Pie Day!

I’m on husband-ordered rest today.  I developed a cold on Sunday that has also turned into a mild fever for the past two days so my dear hubbie has ordered rest.  So I’m resting…I’m just using my fingers to type right now!

Okay, all this talk of pies and more pies is making me hungry.  Time for lunch!!  Oh, speaking of food,  I’ve discovered that a pregnant brain is a crazy thing.  Last night I was making dinner and it was actually starting to repulse me, but by the time it was being pulled from the oven, I was starving and it looked good.  Now that I think about it, generally looking at food makes me kind of grossed out nowadays, but then I’m starving and eat like normal.  So all food is yucky until I’m hungry.  Kinda crazy, if you ask me.

 

National Pie Day

I’ve read on another’s blog that January 23, 2009 has been designated (by whoever it is that designates these things) as National Pie Day.  I’m not usually one for celebrating all the little odds and ends designated days out there, but who can’t wrap their minds around a day for PIE???

Since I could probably live happily for some time on apple pie, I think I will just have to participate in celebrating pie on Friday.  Hmmm, now that I’m thinkin’…I could easily come up with pie for breakfast, dinner and dessert that day!  Dinner is easy…pot pies.  Breakfast though, I’ll have to look some things up and see what I come up with.  And dessert, that’s a no brainer, APPLE PIE!!!

I suppose I could use this opportunity to hone my pie crust making skills, since I don’t have any, but I will probably cheat and buy one of those Pillsbury pre-made refrigerated pie crusts.  Pie crust scares me.  I have made maybe two pie crusts from scratch and they were both awful.  At the very least, Dave & I will eat some previously frozen Mrs. Smith’s apple pie for dessert on Friday evening!

First Anniversary of My Grandmother’s Passing

Yesterday was the first anniversary of my mother’s mom’s death.  It is hard to believe she is gone sometimes.  And I will very much miss introducing our baby to that wonderful woman.  This morning Dave & I had a mass said for her so we got up early and went to church.  Attending a daily mass is a wonderful way to start the day, I’m just too lazy to get myself to church at 7:30AM every morning.  Grandma went to daily mass for a huge chunk of her life, I should really try to honor her memory and start that habit someday as well.
